Yummy Gluten Free Breakfast Cookie

I have searched long and hard for a breakfast cookie to buy. It didn't happen. I ended up paying too much money, the cookies had too much sugar, and sometimes were stale! Necessity breeds invention and I got busy creating my own simple recipe for a yummy, healthy, and hearty cookie.  They are gluten free & great pre-workout for an energy boost and in between meals as a snack.  Remember being healthy means putting the best stuff in our body! I hope you enjoy them as much as I do.

Ingredients

4 ripe bananas
2 1/2 cups raw gluten free oats 
6 Tablespoons nut butter of your choice
1/2 cup chopped walnuts
1/4 cup raisins
1 shredded carrot
1/2 teaspoon each cinnamon, salt, vanilla extract

You can also add: chia seeds, cacao nibs, etc. Make it your own! This is a great base.

1. Preheat oven 350. Line 2 baking sheets with parchment paper.
2. Mash bananas in a large bowl. Stir in oats - don't overmix or it will become runny. Add everything else.
3. Drop by heaping tablespoons onto parchment paper.
4. Bake for 15 minutes. let cool 10 minutes.

Store in airtight container in fridge or freezer.
Makes about 40 small cookies.
